Flour. Starter. Water.
That's the recipe. All of it. A sourdough starter we feed every day does the heavy lifting — no commercial yeast, no shortcuts, nothing you'd need a chemistry degree to pronounce.
HR 01 The mix
Mixed. Barely.
Shaggy is the goal. Overworked dough is dead dough. We mix until it holds together and not one second longer.
HR 02 The bench
Dumped & kneaded.
Out of the bowl, onto the wood. Fold, turn, fold, turn. This is the only workout this pizza will ever get.
HR 48 The wait
Now we wait. Two days.
Cold fermentation, 48 hours. The dough builds flavor you can't fake and a crust your stomach won't argue with. Patience is an ingredient.

Stretched by hand.
No rolling pin. Ever. Gravity, knuckles, and two days of gluten doing exactly what it was born to do.

Tomatoes. Salt. Oil.
Hand-crushed and uncooked — the oven cooks it in the final 95 seconds so it tastes like tomatoes, not like a can.
THE BAKE The fire
95 seconds of violence.
800°F and change. The crust springs, blisters, leopard-spots. Turn, turn, turn — out.
